Zucchini boats ( green summer squash)

Ingredients:

  • 4 Zucchini
  • 1/2 lb ground meat ( pork or beef)
  • 1 Onion diced
  • 2 Gloves Garlich finely hacked
  • 1 can crushed Tomatoes
  • 2 Tablespoon Tomato Paste
  • 1 cup vegetable broth
  • 1/2 teaspoon Sugar
  • 1/2 teaspoon Rosemary
  • 1/2 teaspoon Oregano
  • 1/2 teaspoon Majoran
  • Salt and Pepper to your liking
  • 1 1/4 cup light grated mozzarella cheese

1. half the zucchini in length, remove some of the fruit flesh place Zucchini in an Oven casserole pan. The cut-out zucchini flesh dice finely place to the side. Preheat 350 Fahrenheit.

2. heat large skillet sharply fry, ground beef when its nearly done add garlic and onion let fry for about 3 minutes.

3. now add the diced zucchini flesh into the ground beef and fry another 3 minutes

4. then add spices, sugar, diced tomato, the vegetables broth, and tomato paste bring to simmer and let simmer 15 Minutes. Don’t be afraid to add more spices if need be as the zucchini boats are rather mild and no spices are added to them so the sauce has to make up

for it

5. fill the zucchini with the ground beef sauce and cover the top with mozzarella cheese, the rest of sauce can be placed around the boats.

now bake for 30-40 minutes until the zucchini is soft ( may need to cover the casserole with tin foil the first 20-25 to avoid burned cheese)
