
This soup was for a long time traditionally served as the first dish at a wedding dinner.
I personally love it , especially my Grandkids love to eat this soup
Ingredients:
2 Liter (8 and 1/2 cup) precooked Soup / broth of any kind
Ingredients for dumplings.
1/4 l Milk ( 1 cup)
1 Tablespoon Salt
1 /4 Teaspoon powdered
nutmeg
1 Large Tablespoon Butter
1/2 cup hard wheat semolina ( no flour has to be the gritty kind)
2 eggs
How its done :
in a pot bring Milk, Butter Salt Nutmeg to a boil ( Trick: if you use a bid of Butter and rub the inside upper half of Pot with Butter the milk will not boil over )…
Once it simmers add hard wheat semolina and stir with a wooden spoon until the dough lifts of the bottom of the pot, remove from stove and place dough in a bowl let cool off so you can stir in the two eggs mix it well.
Bring broth to a boil and with two teaspoon form small oval dumplings until you have no more dough left. bring to a short boil remove pot from the heat and place lid on pot, and let the dumplings rest 10 -15 minutes — may need to see if dumplings are done by tasting them after 10 min. if still hard inside give them 5 more minutes … Dumplings should be soft inside as well.
Serve with broth …
