
Coleslaw with twist, i tried this one … and liked it .
- One small white cabbage (about 1 lb)
- 1 medium Carrot
- One cabbage turnip (about 1 lb )
- One granny smith apple
- Juice of 1 lemon
- 2 tbsp finely chopped fresh parsley
For the dressing
- 4 tbsp mayonnaise
- 3 tbsp Dijon mustard
- 2 tbsp crème fraîche
- Salt & pepper to your liking
- Finely shred the white cabbage (about 0.5cm thick) into a large bowl, discarding the core. Repeat with the kohlrabi, discarding the antennae-like stems and leaves. Shred carrot. Cut the apple into matchsticks, discarding the center, then add to the bowl.
- pure over most of the lemon juice and toss to coat. To stop the slaw from turning brown.
- In a small bowl, combine all the dressing ingredients and season well.
- Pour dressing over the coleslaw mix and toss everything with the parsley and add a little more lemon juice to your liking.
- Chill for about an hour and serve – good side dish with barbecue
