Coleslaw with twist

Coleslaw with twist, i tried this one … and liked it . 

  • One small white cabbage (about 1 lb)
  • 1 medium Carrot
  • One cabbage turnip (about 1 lb )
  • One granny smith apple
  • Juice of 1 lemon 
  • 2 tbsp finely chopped fresh parsley

For the dressing

  • 4 tbsp mayonnaise
  • 3 tbsp Dijon mustard
  • 2 tbsp crème fraîche
  • Salt & pepper to your liking 
  1. Finely shred the white cabbage (about 0.5cm thick) into a large bowl, discarding the core. Repeat with the kohlrabi, discarding the antennae-like stems and leaves. Shred carrot. Cut the apple into matchsticks, discarding the center, then add to the bowl.
  2. pure over most of the lemon juice and toss to coat. To stop the slaw from turning brown. 
  3. In a small bowl, combine all the dressing ingredients and season well. 
  4. Pour dressing over the coleslaw mix and toss everything with the parsley and add a little more lemon juice to your liking. 
  5. Chill for about an hour and serve – good side dish with barbecue
