Bauerngröstl – Farmers Stir Fry ( Meal made with Leftover Roast)

1lb potatoes (pre-boiled) peeled, thinly sliced
1 cup broth ( vegetable or beef)
Leftover pork or beef roast thinly sliced or cut in thin stripes
1 cup diced cured bacon
One bay leaf
One teaspoon cooking oil
One medium-sized onion peeled and diced
a pinch of marjoram ( to your liking)
salt and pepper to your liking

Cut the cooked and peeled potatoes into slices.
Cut the onion and bacon into small cubes, heat oil in a large skillet, and fry onions and bacon. Add spices, cut the leftover roast into thin strips or slices and add to the frying pan and sauté.
After 2-3 minutes, add the potato slices, mix everything,
then pour half of the broth into the frying pan and mix it well and roast well; now and then, add more broth to assure the gröstl stays moist and develops a crisp to potatoes.

Done when most of the potatoes have a brown crispy crust.

Tip : Serve with one or two eggs over easy
