Plum Sheet Cake

One of my favorite Cake during the plum season …

Ingredients

  • 2&¾ cups non-rising flour
  • 1 pack dry yeast powder
  • 1 pinch of sugar
  • ½ cup and one tablespoon of Milk
  • 1 egg
  • 1 teaspoon grated lemon peel
  • A pinch of salt
  • ¼ cup softened butter
  • 1/3 cup sugar
  • 1 pack Vanilla sugar
  • 1&½ teaspoon powder cinnamon
  • 3lbs plums (seeds removed and cut in quarter pieces)

Instructions:

Put flour in a large bowl and in the middle of flour create a slight hollow. Take a packet of yeast and spread in hollow evenly, add the butter in flakesNow add egg, milk, lemon peel, and 1 teaspoon sugar from the 1/3 cup sugar. With a dough hook mix, all ingredients until dough is non-sticky and smooth. If u don’t have a dough hook use a large cooking spoon and mix dough with it.

Then place dough on an oven-safe plate. Preheat oven to 125 Fahrenheit ( with the most oven it’s the keep warm setting or lowest heat) place plate with the dough in the oven for 25- 30 minutes dough should have risen to twice its size.

While you wait for the dough to rise, prepare plums seed removed and quartered. Prepare a baking sheet with butter and flour for baking (Ingredients not mentioned as we all know how to prepare the backing sheets or forms) Mix sugar and Vanilla sugar and cinnamon in a small bowl.

Once the dough has risen remove from oven and roll out a large enough square that fits the size of a baking sheet if u can manage roll it out inside the form of the baking sheet then arrange plums on the dough. 

Now take half of the amount of sugar & cinnamon mixture and evenly spread it over plums (alternative with butter crumbs see instruction below)

Preheat oven to 375

Let bake for 35 minutes – remove and let cool off now take rest of sugar-cinnamon mix and spread over cake …

Alternative Butter crumbs topping

Ingredients for butter crumbs

  • 2&½ cups non-rising flour
  • 1& ¼ cup sugar
  • 1 cup diced cold Butter pieces
  • 1 teaspoon cinnamon
  • 1 pack Vanilla sugar

In a bowl place, all Ingredients and mix until it looks like shown in the picture.

Once you dusted plums with the sugar-cinnamon mix, decorate with crumbs. Then bake as instructed above may have to add 5 minutes more baking time

You will not need the rest of the sugar mixture

PS: If u don’t like plums you can use apples peel, half them cut fine slices in the bowl u keep them use the sugar and vanilla sugar-cinnamon mix ( all of it and coat the slices ) then place them on dough then add the crumbs and bake …
