
Krustenbraten mit Gemüse
A friend of mine gave me her all-time favorite Recipe and it was absolutely delicious.
Ingredients:
- 4 lbs Pork roast with skin
- 3 cloves Garlic crushed
- 1/2 teaspoon ground black pepper
- 1/2 Tablespoon ground caraway seeds
- 1/2 Tablespoon tomato paste
- 1/2 Tablespoon salt
- 4 medium-sized carrots cleaned, cut in half and then in bitesize pieces
- 1 large onion finely diced
- 1 medium-sized celery root cleaned, cut in bitesize pieces
- 1 cup vegetable broth
- 2 cup german dark beer
Instruction:
1.) using cold water, rinse the meat and dry off with a clean kitchen towel,
then cut the skin with a sharp knife or kitchen razor so you have squares, make sure u just pierce the skin, and don’t cut too deep into the fat.
Now take the Tomato paste and all spices and mix them together once that’s done take paste and rub it all over the meat evenly ( if u do this the night before and let it rest in the refrigerator the flavor is more intense when baking meat)
2.) Preheat Oven to 350 F, heat roaster on the stovetop place roast skin down in roaster and fry sharply, remove roast and place all the vegetables in the bottom of the roaster, place roast on top vegetable, skin facing up. Cover with Lid and place in Oven and let bake about 90 min.
Make sure that nearly every 20 minutes you drizzle some of the vegetable broth over the roast.
3.)5 min before the bake time is over pour beer over roast – remove the lid of the roaster switch oven to overheat only and continue to bake so that skin turns into a crackling crust.
Served with potato fumbling or boiled salt potatoes
Tip: If u like it to be low carb then just don’t serve it with salt potatoes or Dumplings
