
One of my favorite bread spread is the Fleischsalat, a typical german sidedish – I usually buy this at the store, but homemade tastes better, depending on what ingredients you use. I prefer Hengstenberg Gherkins, and these are most likely to be found in the international food sections in your store.
Ingredients for homemade German Fleischsalat:
- 1 1/2 cups of Lyoner sausage OR Bologna cut in thin fine strips
- 1 cup of diced pickles ( i take time and cut them in fine thin strips)
- Two tablespoons of the liquid from the jar of the pickles
- 1 cup of mayonnaise ( Hellmann’s Real Mayonaise)
- 3/4 cup of plain whole-milk yogurt
- 1/4cup sour cream
- 1 tablespoon of sugar
- salt (optional)
In a large bowl, mix mayonnaise, sour cream, liquid from pickles, and sugar using a whisk. Cut into fine thin strips. Dice the pickles. Add your choice of sausage and diced pickles to the dressing and stir with a spatula. Add salt to your liking. Let it chill overnight.
My personal choice: I add 1Tablespoon of fine chopped chives and parsley
