Hearty Salami Noodle salad

I found this recipe and liked it , however i did add extra some ingredients to the salad – in the original recipe there was no, garlic, eggs, or mushroom added to the salad

1lb cooked spiral noodles ( al dente)
1/4 pound sliced salami then diced or cut into stripes
15 cherry tomatoes cut in quarters
2 green onions thinly sliced
1 glove fresh garlic pressed
1 cup tiny heads mushroom whole
4 hardboiled eggs diced
4 gherkins diced

Dressing
2 Tablespoon Juice from gherkins
8 tablespoons table vinegar
8 tablespoons olive oil ( i use the Olive oil for salads and cold foods not for cooking )
2 Tablespoon medium-hot mustard ( do not use french mustard see picture)
2 Tablespoon powdered mild/sweet paprika
1/2 teaspoon black pepper

  1. Step – blend all Dressing ingredients with a mixer to a smooth dressing
  2. Combine all salad ingredients in a large salad bowl mix gently then pour dressing over it and with two Spoons lift it under the ingredients
  3. Chill at least 4 hours before serving

Tip: for those that like it spicy – instead of the medium-hot mustard
use 1 Tablespoon hot mustard ( see picture ) and ad 1/4 teaspoon ground dried peperoncino ( Italian tiny pepperoni real hot )
