I found this recipe in a german Low Carb Recipe Book – tried it and liked it. One Problem is I could not find the English name for Fleischwurst another Name used for it is Lyoner Sausage. I just post a picture so you know what I mean

Ingredients
- 1 ring Fleischwurst /Lyoner peel skin, cut in thin slices
- 2 shallots diced
- 1 large red bell pepper diced
- 6 large fresh brown champignons sliced
- 1 can diced tomatoes
- 2 tablespoons tomato paste
- 2 cloves fresh garlic finely diced
- 2-3 leaves basil sliced
- a pinch of Majoran
- 1cup vegetable broth
- 2 tablespoon Olive oil
- Salt and pepper to your liking
- 3 table Spoons of sweet cream

In a large deep skillet heat Olive oil, then fry Sausage, onion, bell pepper, champignons, spices, and garlic for about 5 minutes, then add canned diced tomatoes, the vegetable broth, and tomato paste and let simmer on low heat for 10 minutes.
To thicken sauce add the sweet cream stir well …
You can add another vegetable such as squash, or eggplant.
